A Better Tomato Sauce

Normally on the internet, recipes start with a long rambling story about your cool lifestyle and how cool this cool recipe makes you look to all your cool bored friends. I will simply observe that commercial pasta sauce, tomato sauce, and tomato paste are all too salty and I wanted an alternative.

    Ingredients

  • 2 lbs Roma tomatoes
  • 1 tbsp Oregano dry
  • 1 tsp Parsley dry
  • 1/2 tsp Chives dry
  • 1 1/2 tsp Basil dry
  • 1/2 tsp Cilantro dry
  • 2 tsp Black Pepper
  • 2 tsp ocean Salt
  • 1/4 cup olive oil
  • 1 tsp butter
    Procedure

  1. Chop tomatoes into tiny bits about 1/4″ square.
  2. Mix in large bowl with dry spices, salting evenly.
  3. Let sit overnight in the fridge.
  4. In the morning, pour off water and place on non-stick oven pan.
  5. Cook for 25 minutes at 425 F
  6. Let cool, then dump in blender with olive oil and butter (heat in microwave for thirty seconds)
  7. Puree.

This makes about two cups of an Italian/Spanish style tomato sauce that you can use on pasta, pizza, or in recipes. Believe it or not, it has less salt and acid than the commercial versions and if you shop carefully, can be price competitive.
