Fajitas

Some text should go here about a perfect life, and a perfect dinner party, or maybe something zesty about cooking. Really this is just here so that you can feed your family without sacrificing yourself on the altar of spending hours just trying to emulate some mommy blogger.

    Ingredients

  • 2-3 lb flank steak
  • 1/2 lb butter
  • 1 small onion
  • 3 cloves garlic
  • 2 large jalapeno peppers
  • 2 tsp black pepper
  • 1 tsp dried parsley
  • 1 tsp dried oregano
  • 1 tbsp dried cilantro / one-quarter cup fresh cilantro, chopped
  • 1 tsp salt
  • 6 large limes
    Instructions

  1. Tenderize steak by pounding the heck out of it. Place it in a large container that you can seal.
  2. In Pyrex measuring cup, add four pats butter and dry spices. Finely chop garlic, onion, and jalapenos and add to cup. Pour in about 1/4 cup water and heat on high in microwave until boiling, then let sit until cool.
  3. While marinade is cooling, juice six lemons and filter the liquid. When marinade is cool, add lime juice, mix, and pour over steak.
  4. Seal container and let steak marinate for 12-96 hours.
  5. Remove steak from refrigerator and allow to come to room temperature. Set frying pan on maximum temperature before butter burns, and melt remaining butter. Place steak in frying pan and sear each side, cooking until it is a very rare medium rare.
  6. Slice meat with the grain into small pieces, cutting diagonally through its height. Reduce heat to low medium, add more butter as needed and a pinch of salt and pepper. Then, place cut meat into frying pan and cook briefly, saturating the meat in butter. After two minutes, remove from heat and serve.

Serves four people.
